This is a washed process coffee from the Sierra Azul cooperative in the Chiapas region of Mexico, that consists of approximately 200 smallholder farms. Nestled within the Truinfo Biosphere Reserve, coffee farms thrive from the surrounding biodiversity and healthy ecological symbiosis within the mountainous landscape.
Sierra Azul cooperative has maintained a strong community by creating programs and providing support for its members, while ensuring high quality with protocols and parameters in place.
While we have carried a decaf Mexico and a funkier anaerobic natural Mexico, this is the first longer release, washed process Mexico we have carried. This coffee is a great showcasing of a chocolatey yet balanced brightness of this region. We have sourced this coffee in partnership with Cereza Coffee, and it is certified fair trade & organic.
